Recipes

Two pounds ground beef
4 tablespoons allspice
1 teaspoon salt
1/2 cup finely chopped parsley
1/4 cup finely chopped onion
Blend together in meat make patties ..

Peel and cut four potatoes round one inch thickness..

In a pan sauté two teaspoons olive oil three tablespoons garlic sauce with 3 chopped tomatoes or one can crushed tomatoes and one finely chopped onion

Layer potato and meat top with tomatoes sauce cover and keep stove top until cooked about 45 min
Can also be prepared in slow cooker or oven

Toss salad iceberg and romaine lettuce tomatoes cucumber
Lemon garlic olive oil and vinegar

Dip in hummus

Instead of meat layer eggplant
 Peel eggplantnight before cut two inches think salt and place in strainer
Place eggplant in glass pan spritz with olive oil bake uncovered for 15 min or until eggplant is slightly brown then later in potatoes and fresh slices of tomatoes if tomatoes not available use crushed can tomatoes
Sauté half chopped onion three tablespoon garlic and olive oil add tomatoes sauce and crushed then place over eggplant and potatoes bake covered for 40 min 350 uncover and bake for 10 min remove from oven let stand for 10 min enjoy
Can be eaten cold or at room temp
